Hello everyone! Hope you all doing great today and staying cool. Still a month or two left of this hot weather and I know my last couple of posts have been about Fall and cozy throws which right now I’m sure you’re going, not yet! Well, today lets take about no bake goodies that take you away from the oven.
The first recipe I have for you today is a huge hit with my family, co-workers and anyone who had the joy of tasting these. There like a potato chip we all know about, “you can’t eat just one.” Fair warning, these do go very fast so I’d make an extra batch to have on hand. By the way, one last thing for those dieting. These cookies are healthy and made for low-calorie so don’t feel guilty about having some.
Low-Cal No Bake Chocolate/Oatmeal Cookies
1/2 Cup light butter 1/2 Cup milk 1 or 2 Cups white sugar 3 Tbs unsweetened cocoa powder
1/2 Cup peanut butter 1 tsp vanilla extract 1/4 tsp salt 3 Cup quick cooking oats
1/2 to 3/4 Cup coconut or you can substitute with 1/2 Cup chopped pecans
Mix together butter, milk, sugar, and cocoa powder in a small saucepan over medium heat. Bring to a boil and cook for 1 minute. Remove from heat and stir in peanut butter, vanilla extract, and salt. Stir in oats and coconut or pecans. Using a small cookie scoop or teaspoon, drop onto wax or parchment paper. Allow cookies to stand for 1 hour or until set. *Note: The sugar amount is up to you wither to use 1 or two cups depending if you want to keep the calorie number down.
